Matcha Pancakes

The first recipe is for Matcha Pancakes. These pancakes are light and fluffy, with a subtle hint of matcha flavor. They're perfect for a leisurely weekend breakfast or brunch.

Ingredients:

  • 1 c all-purpose flour (GF blend works great)
  • 1 Tbsp matcha powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 3/4-1 cup of preferred milk
  • 1 egg
  • 1 tsp vanilla extract
  • 3 Tbsp maple syrup

Instructions:

In a large bowl, whisk together the flour, baking powder, baking soda, sugar, and matcha powder. In a separate bowl whisk together the egg and milk. Add the wet ingredients to the dry ingredients and mix until just combined. Melt the butter and stir into the batter. Cook pancakes on a lightly greased griddle or pan over medium heat until browned on both sides. Serve with fresh fruit or your favorite syrup.

The Benefits of Matcha Recipes

Matcha powder is made from grinding the entire tea leaf, resulting in a greater amount of antioxidants and chlorophyll than traditional green tea. Studies of matcha have unearthed potential brain-boosting effects, as well as a host of other health benefits to nourish and energize you in your New Year’s endeavors.

Nourishing Benefits

The L-theanine in matcha provides a longer-lasting, more consistent release of caffeine without the coffee crash. It’s also what is thought to be behind the energy and brain boost many attribute to this beloved traditional drink.

Its sky-high antioxidant levels help protect your cells against free radicals and may contribute to anti-aging* effects.

*Aging is a natural process, not something to fear. When we use terms like anti-aging, we’re referring to properties that allow us to age well, renew our energies and offer longevity.

These recipes are just a small sampling of what you can make with matcha powder. Be creative and experiment to find new ways to include this healthy ingredient in your diet.
