Refresh from the inside out with this magically delicious agua fresca, made with real fruit, fresh herbs and citrus and nutrient-dense maple syrup to sweeten the deal. Cheers!
4 c. chopped watermelon
1 container of mint (5-6 springs of mint)
1 inch ginger root (peeled and cut into slices)
1 Tbsp maple syrup (depending on how sweet the watermelon is you might want more)
2 large limes juiced
3 c. water (sparkling)
Throw all ingredients except the sparking water into the blender and blend till you have a smooth consistency. Strain mixture through a fine-mesh strainer (optional, but gives you a smoother consistency). Add sparkling water, check sweetness level and adjust if you'd like it a little sweeter by adding more maple syrup. Chill and serve over ice!
* Bonus idea for if you're feeling fancy: freeze some extra lime juice into ice cubes and pour fresca over for an extra refreshing splash!
